Crab Cake Mixture

Method

Preparation

  1. 1

    Mix Crab Cake Ingredients

In a large bowl, combine the fresh crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, and chopped green onion. Mix gently to combine without breaking up the crab meat too much.

  2. 2

    Add Breadcrumbs and Seasoning

Sprinkle the breadcrumbs, salt, and black pepper over the mixture. Fold in gently until all ingredients are evenly incorporated. The mixture should hold together; if too wet, add more breadcrumbs.

  3. 3

    Chill the Mixture

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to firm up.

Cooking

  1. 4

    Form Crab Cakes

Once chilled, remove the mixture from the fridge and form into patties about 2-3 inches in diameter.

  2. 5

    Heat Oil

In a large skillet, heat the vegetable oil over medium heat until shimmering, about 5 minutes.

  3. 6

    Fry the Crab Cakes

Carefully place the crab cakes in the skillet, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.

  4. 7

    Drain and Serve

Once cooked, transfer the crab cakes to a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges and tartar sauce on the side.
