Method
Prepare French Toast

Mix Egg Mixture
In a large bowl, whisk together 4 eggs, 1 cup of milk, 1 tsp of vanilla extract, and 1 tsp of ground cinnamon until well combined.

Soak Bread
Dip each slice of bread into the egg mixture, ensuring both sides are coated. Allow the bread to soak for a few seconds.

Cook French Toast
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the soaked bread slices and cook for 3-4 minutes on each side until golden brown. Repeat with remaining bread slices.
Poach Eggs

Boil Water
In a saucepan, bring water to a gentle simmer and add 1 tablespoon of vinegar.

Crack each egg into a small bowl and gently slide it into the simmering water. Poach for about 3-4 minutes, until the whites are set and the yolks are still soft. Remove with a slotted spoon and set aside.
Prepare Avocado

Cut the avocado in half, remove the pit, and slice the flesh into thin pieces.
Cook Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Drain on paper towels.
Make Hollandaise Sauce

Melt Butter
In a small saucepan, melt 1 stick of butter over low heat. Set aside to cool slightly.

Whisk Egg Yolks
In a bowl, whisk together 3 egg yolks and 1 tablespoon of lemon juice until pale and thick.

Combine Mixtures
Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and creamy. Season with 1 teaspoon of salt and a pinch of cayenne pepper.
