Method
Preparation of Chicken and Vegetables
- 1
Cut Chicken and Vegetables
Cut the chicken breast into 1-inch cubes. Chop the bell peppers and red onion into similar-sized pieces. Set aside.
- 2
Prepare Marinade
In a bowl, mix together olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper. Add the chicken cubes to the marinade, ensuring they are well-coated. Let marinate for at least 30 minutes in the refrigerator.
Skewering and Grilling
- 3
Assemble Kabobs
Once marinated, thread the chicken, bell peppers, red onion, and cherry tomatoes onto skewers, alternating between chicken and vegetables.
- 4
Preheat Grill
Preheat the grill to medium-high heat.
- 5
Grill Kabobs
Place the assembled skewers on the grill. Cook for about 10-15 minutes, turning occasionally until the chicken is cooked through and the vegetables are tender.
Cooking Rice
- 6
Rinse Rice
Rinse the long-grain rice under cold water until the water runs clear.
- 7
Cook Rice
In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the water is absorbed.
Serving
- 8
Plate the Dish
Serve the grilled chicken shish kabobs over a bed of fluffy rice. Optionally, garnish with fresh herbs like parsley or a squeeze of lemon juice.
