For the Chicken Croquettes

Prepare the Filling
In a large skillet over medium heat, add a tablespoon of vegetable oil and sauté the chopped onion and minced garlic until fragrant and translucent, about 5 minutes. In a bowl, combine the shredded chicken, sautéed onion and garlic, salt, pepper, and paprika. Mix well and set aside.

Shape the Croquettes
With your hands, take a portion of the mixture and shape it into small logs or patties, about 2 inches long. Repeat until all the mixture is used.

Coat the Croquettes
Set up a breading station: place the breadcrumbs in a shallow dish. Dredge each croquette in the breadcrumbs, ensuring they are fully coated.

Fry the Croquettes
Heat vegetable oil in a deep frying pan over medium heat. Once hot, carefully add the croquettes in batches, frying until golden brown on all sides, about 5-7 minutes. Remove and drain on paper towels.

Make the Gravy
In a saucepan, heat the turkey drippings or stock over medium heat. In a small bowl, mix the flour with a little cold water to create a slurry. Gradually whisk the slurry into the hot stock, stirring constantly until thickened. Season with salt and pepper.
