For the Cranberry Sauce

Method

For the Chicken Croquettes

  1. 1

    Prepare the Filling

In a large skillet over medium heat, add a tablespoon of vegetable oil and sauté the chopped onion and minced garlic until fragrant and translucent, about 5 minutes. In a bowl, combine the shredded chicken, sautéed onion and garlic, salt, pepper, and paprika. Mix well and set aside.

  2. 2

    Prepare the Croquette Mixture

In a separate bowl, whisk together the eggs and milk. Gradually add the flour to the egg mixture until you form a smooth batter. Fold in the chicken mixture and stir until fully combined.

  3. 3

    Shape the Croquettes

With your hands, take a portion of the mixture and shape it into small logs or patties, about 2 inches long. Repeat until all the mixture is used.

  4. 4

    Coat the Croquettes

Set up a breading station: place the breadcrumbs in a shallow dish. Dredge each croquette in the breadcrumbs, ensuring they are fully coated.

  5. 5

    Fry the Croquettes

Heat vegetable oil in a deep frying pan over medium heat. Once hot, carefully add the croquettes in batches, frying until golden brown on all sides, about 5-7 minutes. Remove and drain on paper towels.

For the Mashed Potatoes

  1. 6

    Cook the Potatoes

In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

  2. 7

    Mash the Potatoes

Add butter, milk, salt, and pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning as necessary.

For the Turkey Gravy

  1. 8

    Make the Gravy

In a saucepan, heat the turkey drippings or stock over medium heat. In a small bowl, mix the flour with a little cold water to create a slurry. Gradually whisk the slurry into the hot stock, stirring constantly until thickened. Season with salt and pepper.

For the Cranberry Sauce

  1. 9

    Cook the Cranberry Sauce

In a medium saucepan, combine cranberries, sugar, and water. Bring to a boil over medium heat, then reduce to a simmer. Cook until cranberries pop and the sauce thickens, about 10-15 minutes. Stir in the orange zest and remove from heat.
