Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and sugar. Whisk together until well blended.

Mix Wet Ingredients
In another bowl, whisk together the buttermilk, egg, melted unsalted butter (if using), and vanilla extract until smooth.

Combine Dry and Wet Mixtures
Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined. Do not overmix; the batter should be slightly lumpy.
Cooking the Pancakes

Preheat the Skillet
Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a small amount of butter.

Cook the Pancakes
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
Serving

Stack the pancakes on a plate, serve with warm maple syrup and whipped butter on the side.
