Cooking the Brisket

    Prepare the Brisket

    Preheat your oven to 300°F (150°C). Pat the beef brisket dry with paper towels. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and paprika. Rub this spice mixture all over the brisket.

    Sear the Brisket

    In a large Dutch oven or heavy oven-safe pot, heat the olive oil over medium-high heat. Once hot, add the brisket and sear it on all sides until browned, about 3-4 minutes per side.

    Add Broth and Cook

    Once seared, pour the beef broth into the pot. Cover with a lid and transfer to the preheated oven. Cook for 4-5 hours, or until the brisket is fork-tender.

    Rest the Brisket

    Remove the brisket from the oven and let it rest for at least 30 minutes before slicing.

Making the Beef Jus

    Collect Drippings

    After removing the brisket, pour the drippings from the pot into a measuring cup, keeping 1 cup for the jus.

    Simmer the Jus

    In a saucepan, combine the beef drippings, beef broth, red wine, and thyme. Bring to a simmer over medium heat, stirring occasionally.

    Thicken the Jus

    In a small bowl, mix cornstarch with water to create a slurry. Slowly whisk this into the simmering jus until it thickens to your desired consistency.

    Strain and Serve

    Strain the jus through a fine mesh sieve to remove any solids. Serve warm alongside the sliced brisket.
