Method

Pasta Preparation

  1. 1

    Cook the Penne Pasta

In a large pot, bring 4 quarts of water to a boil. Add 1 tablespoon of salt and the penne pasta. Cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.

Broccoli Preparation

  1. 2

    Blacken the Broccoli

In a large skillet over medium-high heat, add olive oil. Once hot, add the broccoli florets. Sprinkle with paprika, garlic powder, cayenne pepper, and salt. Sauté for about 5-7 minutes, stirring occasionally, until the broccoli is tender and slightly charred. Remove from heat and set aside.

Alfredo Sauce Preparation

  1. 3

    Make the Alfredo Sauce

In a saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Reduce heat to low and mix in the grated Parmesan, mozzarella, fontina, and cream cheese until melted and smooth. Season with black pepper. If the sauce is too thick, add a splash of pasta water to thin it out.

Combine and Serve

  1. 4

    Mix Everything Together

In a large mixing bowl, combine the cooked penne pasta, blackened broccoli, and Alfredo sauce. Toss until everything is well coated. Serve warm, garnished with extra cheese or black pepper if desired.
