Prepare the Shrimp

Season the Shrimp
In a mixing bowl, combine the peeled and deveined shrimp with salt and black pepper. Toss to coat evenly.

Coat the Shrimp
Sprinkle cornstarch over the seasoned shrimp and toss until each shrimp is well coated.
Make the Chipotle Sauce

Combine Ingredients
In a separate bowl, whisk together mayonnaise, sweet chili sauce, minced chipotle in adobo, and lime juice until smooth and well combined.
Cook the Shrimp

Heat the Oil
In a large skillet or frying pan, heat the vegetable oil over medium-high heat until hot.

Fry the Shrimp
Carefully add the coated shrimp in batches to the hot oil, frying until golden brown and cooked through, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
Assemble the Dish

Plate the Dish
On a serving platter, lay down the shredded lettuce as a bed for the shrimp.

Toss the cooked shrimp with the chipotle sauce until evenly coated, then place them over the shredded lettuce.
