Preparation
- 1
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 2
Prepare the Chicken
Rinse the halved chicken under cold water and pat it dry with paper towels.
- 3
Make the Marinade
In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk together until well mixed.
- 4
Marinate the Chicken
Place the chicken halves in a baking dish, skin side up, and pour the marinade over them. Make sure the chicken is well coated. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
Baking
- 5
Bake the Chicken
After marinating, place the baking dish in the preheated oven. Bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
- 6
Rest the Chicken
Once done, remove the chicken from the oven and let it rest for about 10 minutes before serving. This helps the juices redistribute.
