Yellow Curry

Prepare the Lentils
Rinse the yellow lentils under cold water until the water runs clear. Drain and set aside.

Cook the Aromatics
In a large pot, heat 1 tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add Garlic and Ginger
Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

Combine Lentils and Liquid
Add the rinsed lentils, vegetable broth, and coconut milk to the pot. Stir to combine and bring to a boil.

Simmer the Curry
Reduce heat to low, cover, and let simmer for 25-30 minutes, or until the lentils are tender. Stir occasionally.

Season and Garnish
Once cooked, season with salt to taste. Garnish with chopped cilantro before serving.

Prepare the Dough
In a mixing bowl, combine the whole wheat flour and salt. Gradually add water, mixing until a soft dough forms.

Knead the Dough
Knead the dough for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Shape the Parathas
Divide the dough into equal portions. Roll each portion into a ball and flatten it slightly.

Roll the Paratha
On a floured surface, roll each ball into a circle about 6-8 inches in diameter.

Serve
Remove from skillet and keep warm. Repeat with remaining dough. Serve warm with yellow curry.
