    Prepare the Ingredients

    Chop the onion, mince the garlic and ginger, and cut the pork into bite-sized pieces. Peel and cube the potatoes.

    Toast the Spices

    In a dry skillet over medium heat, toast the coriander and cumin seeds until fragrant, about 2-3 minutes. Remove from heat and crush slightly.

Cooking the Curry

    Sauté Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and ginger, cooking for another 2 minutes.

    Brown the Pork

    Add the pork pieces to the pot and cook until browned on all sides, about 5-7 minutes.

    Add Spices and Mango

    Stir in the curry powder, crushed coriander and cumin seeds, chili powder, salt, and black pepper. Cook for 1 minute until fragrant. Then add the pickled mango, stirring to combine.

    Add Coconut Milk and Potatoes

    Pour in the coconut milk and water. Add the cubed potatoes. Bring to a simmer, then reduce heat to low and cover. Cook for 45 minutes, stirring occasionally.

    Finish the Curry

    Once the pork is tender and the potatoes are cooked through, taste and adjust seasoning if necessary. Let it sit for an additional 10 minutes off heat.

Cooking the Rice

    Prepare the Rice

    While the curry is resting, cook the rice according to package instructions. Usually, this involves rinsing the rice, adding it to a pot with water, and bringing it to a boil before simmering until tender.
