Cooking the Curry

Brown the Pork
Add the pork pieces to the pot and cook until browned on all sides, about 5-7 minutes.

Add Spices and Mango
Stir in the curry powder, crushed coriander and cumin seeds, chili powder, salt, and black pepper. Cook for 1 minute until fragrant. Then add the pickled mango, stirring to combine.

Add Coconut Milk and Potatoes
Pour in the coconut milk and water. Add the cubed potatoes. Bring to a simmer, then reduce heat to low and cover. Cook for 45 minutes, stirring occasionally.

Finish the Curry
Once the pork is tender and the potatoes are cooked through, taste and adjust seasoning if necessary. Let it sit for an additional 10 minutes off heat.

While the curry is resting, cook the rice according to package instructions. Usually, this involves rinsing the rice, adding it to a pot with water, and bringing it to a boil before simmering until tender.
