    Prepare the Dough

    In a large bowl, combine all-purpose flour, caraway seeds, and salt. Mix well. Add the oil and rub it into the flour until the mixture resembles breadcrumbs. Gradually add water, mixing until a smooth dough forms. Knead the dough for about 5 minutes until elastic. Cover with a damp cloth and let it rest for 30 minutes.

    Make the Filling

    In a pan, heat a little oil over medium heat. Add the chopped onion and green chilies, sauté until the onions are translucent. In a bowl, combine the boiled and mashed potatoes, green peas, sautéed onion mixture, garam masala, cumin powder, salt, chopped cilantro, and lemon juice. Mix well and set aside to cool.

Assemble and Fry Samosas

    Shape the Samosas

    Divide the dough into equal portions and roll each portion into a ball. Roll out each ball into a thin oval or circle. Cut the circle in half to form two semicircles. Take one semicircle and form a cone by folding it along the straight edge, sealing the edge with a little water. Fill the cone with the potato mixture, then seal the open edge by pinching it together, ensuring it's well sealed.

    Fry the Samosas

    Heat oil in a deep frying pan over medium heat. Once hot, carefully add the samosas in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Sweet Tamarind Sauce

    Prepare the Sauce

    In a saucepan, combine tamarind paste, brown sugar, salt, and water. Stir well and bring to a simmer over medium heat. Cook for about 10 minutes until slightly thickened. Remove from heat and let cool.
