Cooking the Soup

    Prepare the Ingredients

    Rinse the red lentils under cold water until the water runs clear. Chop the onion, garlic, ginger, and finely chop the cabbage and red onion for topping.

    Sauté Aromatics

    In a large pot, heat 1 tablespoon of oil over medium heat. Add cumin seeds and sauté for about 30 seconds until fragrant. Add chopped onion, garlic, and ginger, and cook until the onion is translucent, about 5 minutes.

    Cook the Lentils

    Add the rinsed lentils, vegetable broth, garam masala, tamarind paste, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the lentils are soft.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

Preparing the Toppings

    Prepare the Toppings

    While the soup is simmering, prepare the toppings. Shred the cabbage, chop the fresh mint leaves, and thinly slice the red onion.

    Heat the Samosas

    If using frozen samosas, heat them according to package instructions. If homemade, reheat them in the oven until crispy.

Serving the Soup

    Serve the Soup

    Ladle the lentil soup into bowls. Top each bowl with shredded cabbage, fresh mint leaves, sliced red onion, and a samosa on the side.
