Preparing the Dough

1. Mixing Ingredients

In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while kneading to form a soft, pliable dough.

2. Resting the Dough

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

3. Cooking Yellow Peas

Soak the yellow peas in water overnight. Drain and boil them in fresh water until soft. Drain and mash the peas.

4. Sautéing Onions and Spices

In a pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds, and once they splutter, add chopped onions. Sauté until golden brown.

5. Combining Filling Ingredients

Add the mashed yellow peas, turmeric powder, red chili powder, and salt to the onion mixture. Mix well and cook for another 5 minutes. Remove from heat and let it cool.

Assembling and Cooking the Parathas

6. Rolling the Dough

Divide the rested dough into equal balls. Roll out each ball into a small circle, about 4 inches in diameter.

7. Stuffing the Parathas

Place a spoonful of the filling in the center of each circle. Fold the edges over the filling to enclose it completely, forming a ball again.

8. Rolling Stuffed Parathas

Gently flatten the stuffed ball and roll it out into a larger circle, about 6-7 inches in diameter.

9. Frying the Parathas

Heat oil in a frying pan over medium heat. Cook each paratha until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
