Noodle Preparation

    Cook the Noodles

    In a large pot, bring water to a boil. Add the yellow wheat noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Broth

    In a large saucepan, heat a bit of oil over medium heat. Add minced garlic and ginger, and sauté until fragrant, about 1-2 minutes.

    Add Chicken

    Add the chicken pieces to the saucepan. Cook until the chicken is browned on all sides, about 5 minutes.

    Combine Ingredients

    Pour in the coconut milk and chicken broth. Stir in fish sauce, lime juice, turmeric, salt, and black pepper. Bring to a simmer.

    Cook the Chicken

    Cover the saucepan and let the broth simmer for about 15-20 minutes, or until the chicken is cooked through.

    Shred the Chicken

    Remove the cooked chicken from the broth and shred it using two forks. Return the shredded chicken to the broth.

Serving Preparation

    Prepare the Toppings

    While the broth is simmering, boil the eggs in a separate pot for about 10 minutes. Once done, peel and slice them in half.

    Assemble the Dish

    In serving bowls, place a portion of the cooked noodles. Ladle the hot coconut chicken broth over the noodles. Top with chopped cilantro, sliced red onion, and half of a boiled egg.
