Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and set aside.

Grate the Ginger
Use a grater to finely grate the ginger and set it aside with the other prepared ingredients.
Cooking the Curry

Sauté the Onions
Add the finely chopped onions to the hot oil and sauté until they become translucent, about 5 minutes.

Add Garlic and Ginger
Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

Add Chicken
Add the chicken pieces to the pan and cook until they are no longer pink, about 5-7 minutes.

Add Spices
Stir in the turmeric, coriander, cumin, red chili powder, and salt. Cook for 1 minute to toast the spices.

Add Potatoes and Coconut Milk
Add the diced potatoes and coconut milk to the pan, stirring well to combine all the ingredients.

Simmer
Bring the mixture to a gentle simmer, cover, and cook for 25-30 minutes, until the potatoes are tender and the chicken is cooked through.

Cook the rice according to package instructions while the curry is simmering.
