Noodle Preparation

Cook the Noodles
In a large pot, bring 1 liter of water to a boil. Add 200 grams of Sii Cheh noodles and cook according to package instructions until al dente. Drain and set aside.

Prepare the Vegetables
While the noodles are cooking, peel and slice the medium carrot into thin matchsticks. De-seed and slice the bell pepper into thin strips. Rinse the spinach in cold water and chop roughly. Chop the green onions into small pieces.
Cooking the Stir-Fry

Stir-Fry the Vegetables
In a large skillet or wok, heat 2 tablespoons of sesame oil over medium-high heat. Add the sliced carrots and bell peppers. Stir-fry for 3-4 minutes until they start to soften.

Add Spinach and Onions
Add the chopped spinach and green onions to the skillet. Stir-fry for an additional 2-3 minutes until the spinach wilts.

Add Sauce
In a small bowl, mix together 3 tablespoons of soy sauce, 1 teaspoon of chili paste, and 1 teaspoon of sugar. Pour the sauce over the stir-fried vegetables and toss to coat evenly.

Add the cooked Sii Cheh noodles to the skillet with the vegetables. Toss everything together for 2-3 minutes until heated through.

If using tofu, cut 200 grams into cubes. In a separate pan, heat a small amount of oil over medium heat and add the tofu cubes. Cook until golden brown on all sides, about 5-7 minutes. Add to the noodle mixture and stir to combine.
