    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the water and oil, mixing until a soft dough forms. Knead for about 5 minutes until smooth. Cover with a cloth and let rest for 30 minutes.

    Cook the Filling

    In a skillet over medium heat, heat 2 tablespoons of oil. Add the chopped onion and minced garlic, cooking until softened. Add the ground beef or lamb, and cook until browned. Stir in ground cumin, ground coriander, black pepper, and chopped cilantro. Cook for another 2-3 minutes. Remove from heat and let cool.

    Shape the Samusas

    Divide the rested dough into small balls. Roll each ball into a thin circle. Place a spoonful of the meat filling on one half of the circle, fold over, and seal the edges by pressing with your fingers or a fork.

    Fry the Samusas

    In a deep pan, heat the oil for frying over medium-high heat. Once hot, gently place the samusas into the oil, frying in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    In a large bowl, add the mixed greens. Top with cherry tomatoes, diced cucumber, and red onion.
