Preparing Noodles

    Cook the Rice Noodles

    Bring 1000 ml of water to a boil in a large pot. Add 200 grams of rice noodles and cook according to package instructions (usually about 5-7 minutes) until tender. Drain and rinse with cold water to stop cooking. Set aside.

Making the Curry Sauce

    Prepare the Aromatics

    Finely chop 1 medium onion, 3 cloves of garlic, and 1 inch piece of ginger.

    Cook the Chicken

    In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.

    Add Chicken and Spices

    Add 300 grams of chicken thighs (cut into bite-sized pieces) to the skillet. Cook until the chicken is browned. Then, stir in 1 teaspoon of turmeric powder and 1 teaspoon of chili powder, mixing well.

    Add Coconut Milk and Season

    Pour in 400 ml of coconut milk and 2 tablespoons of fish sauce. Bring the mixture to a simmer, and season with salt to taste. Let it cook for about 10-15 minutes until the chicken is fully cooked and the sauce thickens slightly.

Assembling the Dish

    Combine Noodles and Sauce

    In a large serving tray, place the cooked rice noodles. Pour the curry sauce over the noodles, ensuring the noodles are well coated.

    Slice the boiled eggs in half and arrange them on top of the noodles. Sprinkle with 1 tablespoon of chopped cilantro and serve with lime wedges on the side.
