Main Ingredients

Method

Preparation

  1. 1

    Prep the Pork

Cut the pork shoulder into bite-sized pieces and season with salt, black pepper, turmeric, coriander, and cumin powder. Set aside.

  2. 2

    Prepare the Aromatics

Finely chop the onion, mince the garlic cloves, and grate the ginger. Set aside.

Cooking

  1. 3

    Sauté the Aromatics

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

  2. 4

    Brown the Pork

Increase the heat to medium-high and add the seasoned pork pieces to the pot. Brown the pork on all sides, about 8-10 minutes.

  3. 5

    Add Mango Pickles

Stir in the mango pickles and slit green chilies, mixing well with the pork and aromatics.

  4. 6

    Add Coconut Milk

Pour in the coconut milk, stirring to combine. Bring the mixture to a gentle simmer.

  5. 7

    Simmer

Reduce heat to low, cover the pot, and let the curry simmer for 45 minutes to 1 hour, or until the pork is tender and cooked through. Stir occasionally and adjust seasoning with more salt if needed.

  6. 8

    Garnish and Serve

Once the pork is tender, remove from heat. Garnish with fresh cilantro before serving.
