Method
Tofu Preparation
- 1
Pressing the Tofu
Start by removing the tofu from its packaging. Wrap the block of tofu in a clean kitchen towel or paper towels to absorb excess moisture. Place a heavy object (like a cast iron skillet or a few cans) on top of the wrapped tofu and let it sit for about 30 minutes.
- 2
Cutting the Tofu
After pressing, unwrap the tofu and cut it into bite-sized cubes (about 1-inch pieces).
- 3
Coating the Tofu
In a large bowl, combine the cornstarch, salt, and black pepper. Toss the tofu cubes in the cornstarch mixture until well coated. Ensure each piece is evenly covered.
Frying
- 4
Heating the Oil
In a large frying pan or wok, heat the vegetable oil over medium-high heat until it shimmers (about 350°F or 175°C).
- 5
Frying the Tofu
Carefully add the coated tofu cubes to the hot oil in a single layer, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove the tofu and transfer it to a plate lined with paper towels to drain excess oil.
Dipping Sauce
- 6
Mixing the Sauce
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, minced garlic, and chili flakes until well combined.
- 7
Serving
Serve the crispy fried tofu hot with the dipping sauce on the side. Garnish with chopped green onion.
