Method
Preparation
- 1
Soak the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.
- 2
Prepare the Mung Beans
Rinse the mung beans and soak them in water for about 2 hours. After soaking, steam the mung beans until they are soft and cooked through.
- 3
Prepare the Coconut Milk Mixture
In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring until the sugar dissolves completely. Do not bring it to a boil.
Cooking
- 4
Cook the Rice
Drain the soaked glutinous rice and place it in a steamer lined with pandan leaves. Steam the rice for about 30-35 minutes until it is fully cooked and sticky.
- 5
Combine Rice and Coconut Mixture
Once the rice is cooked, transfer it to a large mixing bowl. Pour the warm coconut milk mixture over the rice and mix well until the rice is evenly coated.
- 6
Set the Dessert
Transfer the mixed rice to a greased tray or dish, pressing it down gently to create an even layer. Allow it to cool for about 30 minutes at room temperature.
Topping Preparation
- 7
Prepare Toppings
In a small pan over low heat, lightly toast the sesame seeds until golden brown. Set aside. If using coconut flakes, you can toast them lightly as well.
- 8
Serve the Dessert
Once the dessert has set and cooled, cut it into squares or diamonds. Top each piece with steamed mung beans, toasted sesame seeds, and coconut flakes before serving.
