Pudding
Method
Preparation
- 1
Prepare the Dates
In a bowl, combine the chopped dates and boiling water. Let them soak for about 15 minutes until softened.
- 2
Cream Butter and Sugar
In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- 3
Add Eggs
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- 4
Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.
- 5
Mix Everything Together
Gradually add the dry ingredients to the butter mixture, alternating with the soaked dates and their liquid. Mix until just combined.
- 6
Bake the Pudding
Pour the batter into a greased baking dish and bake in a preheated oven at 180°C (350°F) for about 30-35 minutes, or until a skewer inserted in the center comes out clean.
