Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes, then remove from the oven and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat 4 (8 oz) packages of cream cheese until smooth. Gradually add 1 cup of granulated sugar and 1 teaspoon of vanilla extract, mixing until fully incorporated. Add 4 large eggs, one at a time, mixing well after each addition. Finally, add 1 cup of sour cream and mix until smooth.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for about 55-60 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

Chill and Serve
After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight. Once chilled, remove from the springform pan and serve as is or with your choice of toppings, such as fresh fruit or chocolate sauce.
