Burger Preparation

    Prepare the Patty

    In a large mixing bowl, combine the ground chuck, brisket, and short rib. Season with salt and black pepper. Mix gently until just combined, being careful not to overwork the meat.

    Form the Patties

    Divide the mixture into 4 equal portions and shape each portion into a patty, about 3/4 inch thick. Make a slight indentation in the center of each patty to prevent puffing during cooking.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    Toast the Buns

    During the last few minutes of cooking, place the potato buns on the grill or in the skillet to toast them lightly.

    Assemble the Burger

    Place the cooked patties on the bottom half of each bun. Top with lettuce, tomato slices, pickles, and onions if desired. Cover with the top half of the bun.

    Serve

    Serve immediately with your choice of fries, sweet potato fries, apple slaw, or a cup of soup.
