Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy. Then, stir in salt and gradually add flour until a dough forms.

Knead the Dough
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzels
Preheat the oven to 425°F (220°C). After the dough has risen, punch it down and divide it into small pieces (about 1 oz each). Roll each piece into a long rope and twist into a pretzel shape.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil each pretzel for about 30 seconds, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.
