    Make the Root Beer Base

    In a large pot, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Once dissolved, remove from heat.

    Add Flavoring

    Stir in the sarsaparilla extract and the seeds scraped from the vanilla bean, along with the whole vanilla bean pod for extra flavor. Allow the mixture to cool to room temperature.

    Fermentation

    Once cooled, sprinkle the yeast over the mixture and stir gently. Cover the pot with a clean cloth and let it sit at room temperature for 24-48 hours to ferment.

    Bottle the Root Beer

    After fermentation, strain the mixture to remove the vanilla pod and any sediment. Pour the root beer into clean bottles, leaving some space at the top. Seal the bottles tightly.

    Chill and Carbonate

    Refrigerate the bottles for at least 3 days to carbonate. The longer it sits, the fizzier it will become.

    Serve with Vodka

    Once carbonated, pour the root beer into a glass, add 2 oz of vanilla vodka, and top with club soda. Stir gently and serve immediately.
