Make the Dough
In a large bowl, combine the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Prepare the Filling
If using fresh fruit, wash, peel, and chop as necessary. Combine the fruit with sugar and a bit of cornstarch or flour to thicken, if desired.

Roll Out the Dough
On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Cut out circles using a large cookie cutter or a bowl.

Place a tablespoon of filling on one half of each dough circle. Fold the circle over and press the edges to seal, crimping with a fork if desired.
