Make the Biscuits
Preheat the oven to 450°F (230°C). In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Do not overmix.

Form the Biscuits
Turn the dough out onto a lightly floured surface and gently pat it to about 1-inch thickness. Cut out biscuits using a biscuit cutter or a glass. Place the biscuits on a baking sheet.

Bake the Biscuits
Bake in the preheated oven for 10-12 minutes or until golden brown.

Make the Gravy
In a large skillet over medium heat, cook the ground sausage until browned. Sprinkle the flour over the sausage and stir to combine. Cook for 1-2 minutes.

Finish the Gravy
Slowly whisk in the milk, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook until thickened. Season with salt, black pepper, and red pepper flakes to taste.

Serve the warm biscuits topped with the sausage gravy.
