Burger Preparation

    Make the Patty

    In a large bowl, combine the ground chuck, brisket, and short rib. Season with salt and black pepper. Mix gently until just combined.

    Form the Patty

    Divide the meat mixture into two equal portions and shape each portion into a patty, about 3/4-inch thick.

    Cook the Patty

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness, or until desired doneness is reached.

    Toast the Bun

    During the last minute of cooking, place the potato buns cut side down on the grill or skillet to toast lightly.

    Assemble the Burger

    Place the cooked patty on the bottom half of the bun. Top with lettuce, tomato, and pickles. Add onion if desired. Place the top half of the bun on and serve.
