Preparation and Churning

    Prepare the Ice Cream Base

    In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and a pinch of salt. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is warm but not boiling.

    Whisk the Egg Yolks

    In a bowl, whisk the egg yolks until they are pale and slightly thickened.

    Temper the Egg Yolks

    Slowly pour about a cup of the warm cream mixture into the egg yolks, whisking constantly to temper the yolks. This prevents them from scrambling.

    Combine and Thicken

    Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture. Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes). Do not let it boil.

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Let the mixture cool at room temperature, then refrigerate until completely chilled (at least 4 hours or overnight).

    Churn the Ice Cream

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm. Serve and enjoy!
