Cook Quinoa
Rinse the quinoa under cold water. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff with a fork.

Prepare Asparagus
While the quinoa is cooking, trim the ends of the asparagus. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus, season with salt and pepper, and sauté for about 5-7 minutes until tender.

Sear Salmon
Season the salmon fillets with salt and pepper. In the same skillet, add another tablespoon of olive oil and increase the heat to medium-high. Once hot, add the salmon, skin-side down, and sear for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes or until cooked through.

Serve
Plate the quinoa and asparagus, and place the seared salmon on top. Squeeze fresh lemon juice over the salmon before serving.
