Prepare the Pork Belly
Cut the pork belly into bite-sized pieces and season with salt and pepper. In a large pan, heat 1 tablespoon of sesame oil over medium heat and add the pork belly. Cook until golden brown and crispy, about 10-15 minutes. Remove from the pan and set aside.

Cook the Shrimp
In the same pan, add another tablespoon of sesame oil. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant. Add the shrimp and cook until they turn pink, about 3-5 minutes. Remove and set aside.

Cook the Udon Noodles
In a separate pot, bring water to a boil. Cook the udon noodles according to package instructions, usually around 4-5 minutes. Drain and rinse under cold water.

Assemble the Bowl
In a large bowl, combine the udon noodles, sautéed vegetables and mushrooms, pork belly, and shrimp. Toss gently to combine. Garnish with sliced green onions.
