Preparation and Cooking

    Prepare the Dirty Rice

    In a saucepan, cook the dirty rice according to package instructions. Set aside once done.

    Cook the Bacon

    In a skillet, cook the Applewood bacon until crispy. Remove and drain on paper towels, then crumble into pieces.

    Sauté the Rock Shrimp

    In the same skillet with bacon drippings, add olive oil and sauté the rock shrimp for 3-4 minutes until cooked through. Season with salt and pepper.

    Cook the Swordfish

    Preheat a grill or skillet over medium-high heat. Season the swordfish steaks with olive oil, salt, and pepper. Grill for 4-5 minutes on each side or until cooked through and flaky.

    Prepare the Avocado

    Slice the avocados in half, remove the pit, and scoop the flesh out. Dice and set aside.

    Assemble the Dish

    On each plate, place a scoop of dirty rice, top with grilled swordfish, sprinkle with crumbled bacon, sautéed rock shrimp, diced avocado, and roasted sweet corn. Drizzle with sambal chili aioli and a squeeze of lemon juice.
