Method
Preparation

Prepare the Tuna Crudo
In a bowl, combine diced Ahi tuna with lime juice, sesame oil, and salt. Mix gently and set aside.

Make the Sambal Chili Aioli
In a separate bowl, whisk together mayonnaise, sambal oelek, minced garlic, and lemon juice until smooth. Set aside.

Prepare the Edamame Mash
Boil edamame in salted water for about 5 minutes. Drain and blend edamame with olive oil, salt, and lemon juice until smooth.

Prepare the Soy Molasses
In a small bowl, combine soy sauce and molasses. Mix well and set aside.

Fry the Wontons
Heat vegetable oil in a deep pan. Fry wonton wrappers until golden brown and crispy. Drain on paper towels.
Assembly

Assemble the Tostadas
On each crispy wonton, spread a layer of edamame mash, top with tuna crudo, drizzle sambal aioli, add relish, and finish with a drizzle of soy molasses. Serve immediately.
