Preparation Steps

1. Prepare the Potatoes

Peel and chop the potatoes into even chunks. Boil in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

2. Cook the Bacon

In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on paper towels. Reserve some bacon fat for flavor.

3. Mash the Potatoes

Add heavy cream, butter, minced garlic, salt, and pepper to the potatoes. Mash until smooth and creamy. Stir in chopped chives and beaten eggs.

4. Layer the Terrine

Preheat the oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper. Layer half of the potato mixture in the bottom, followed by half of the bacon. Repeat with remaining potato and bacon.

5. Bake

Cover the terrine with foil and bake in the preheated oven for 45-50 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden.

6. Cool and Serve

Allow the terrine to cool for about 15 minutes before slicing. Serve warm or at room temperature.
