Preparation and Cooking

    Prepare the Lamb Shank

    Preheat your oven to 325°F (165°C). Season the lamb shanks with salt, black pepper, and thyme.

    Sear the Lamb

    In a large oven-safe pot, heat olive oil over medium-high heat. Sear the lamb shanks on all sides until browned, about 4-5 minutes per side. Remove from pot and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion, carrot, celery, and garlic. Sauté until softened, about 5-7 minutes.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for about 2-3 minutes.

    Add Stock and Return Lamb

    Add beef stock and return the lamb shanks to the pot. Bring to a simmer, cover, and transfer to the preheated oven.

    Cook the Lamb

    Cook the lamb shanks for about 2-3 hours, or until the meat is tender and falling off the bone.

    Prepare the Sweet Corn Fundito

    In a skillet, combine sweet corn with a little olive oil and sauté until heated through. Blend with cream and cheese until smooth, then season to taste.

    Serve the Dish

    On a plate, place the sweet corn fundito as a base. Top with the tender lamb shank, roasted tomato, salami piccante, and garnish with fresh cilantro, pickled onion, and tomatillo salsa.
