Preparation Steps

    Prepare the Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes until soft. Drain and set aside.

    Sauté Aromatics

    In a pan over medium heat, add a little oil and sauté the shallots and garlic until translucent. Remove from heat and let cool.

    Mix the Meats

    In a large bowl, combine the minced rabbit meat, pork cheek, and pork fatback. Add the sautéed shallots and garlic, thyme, bay leaf, salt, and pepper. Mix thoroughly.

    Add Cognac

    Pour in the cognac or brandy and mix again to combine all ingredients well.

    Incorporate Gelatin

    In a small saucepan, warm the chicken stock and dissolve the soaked gelatin sheets in it. Allow to cool slightly before adding to the meat mixture.

    Combine Everything

    Pour the gelatin mixture into the meat mixture and mix thoroughly until everything is well combined.

    Pack into Terrine Mold

    Transfer the mixture into a terrine mold, pressing down firmly to eliminate air pockets. Smooth the top with a spatula.

    Cover the terrine with plastic wrap and refrigerate for at least 24 hours to set.
