    Prepare the Fries

    Wash and peel the russet potatoes. Cut them into thick strips to form hand-cut fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked potatoes and dry them thoroughly. Fry the potatoes in batches until golden and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

    Prepare the Gravy

    In a saucepan, heat the pastrami gravy until warm. If you don't have pastrami gravy, you can make a simple gravy using beef broth and seasonings.

    Assemble the Poutine

    On a large plate, layer the hot fries, then sprinkle cheese curds on top. Pour the warm pastrami gravy over the fries and cheese curds, allowing the cheese to melt slightly.

    Garnish and Serve

    Top with chopped scallions, sliced pickled shishito peppers, and fresh herbs. Drizzle with 1000 Island dressing before serving.
