Prepare the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced shiitake mushrooms and sauté for about 5 minutes until they start to soften.

Add Peas and Kale
Stir in the English peas and baby kale. Cook for another 3-4 minutes until the kale wilts and the peas are heated through.

Fry the Gnocchi
Increase the heat to medium-high. Add the cooked gnocchi to the skillet and fry until they are golden and crispy, about 5-7 minutes, stirring occasionally.

Add Sauce and Cheese
Pour in the crushed San Marzano tomatoes and balsamic vinegar. Season with salt and black pepper. Stir well and let simmer for 2-3 minutes. Remove from heat and sprinkle crumbled goat cheese on top.

Serve warm, garnished with additional balsamic drizzle if desired.
