Prepare the Ingredients
Wash and dry the Sweet Gem lettuce thoroughly. Tear into bite-sized pieces and place in a large salad bowl.

Prepare Tomatoes
Cut the baby heirloom tomatoes in half and add them to the bowl with the lettuce.

Cook Bacon
In a skillet over medium heat, cook the applewood bacon until crispy. Remove from heat, let cool, and then crumble into pieces.

Combine Ingredients
Add the spiced pecans, crispy shallots, and crumbled bacon to the salad bowl. Crumble the smoked Kentucky bleu cheese on top.
