Chilaquiles Ingredients

Method

Preparation Directions

  1. 1

    Prepare the Fries

Wash and peel the potatoes, then cut them into fries. Soak the fries in cold water for 30 minutes, drain, and pat dry.

  2. 2

    Fry the Potatoes

In a large pot, heat the oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

  3. 3

    Prepare Guajillo Sauce

Remove the stems and seeds from the guajillo chilies. Soak them in hot water for about 15 minutes, then blend with a little water until smooth, creating a sauce.

  4. 4

    Heat Pulled Pork

In a pot, heat the pulled pork over low heat until warmed through. Mix in the guajillo sauce and let it simmer for a few minutes.

  5. 5

    Assemble the Chilaquiles

On a large serving platter, layer the crispy fries, then top with guajillo pulled pork, cheese curds, sliced avocado, and a drizzle of crema.

  6. 6

    Garnish

Finish with fresh cilantro and squeeze lime juice over the top before serving.
