Prepare the Fries
Wash and peel the potatoes, then cut them into fries. Soak the fries in cold water for 30 minutes, drain, and pat dry.

Prepare Guajillo Sauce
Remove the stems and seeds from the guajillo chilies. Soak them in hot water for about 15 minutes, then blend with a little water until smooth, creating a sauce.

Heat Pulled Pork
In a pot, heat the pulled pork over low heat until warmed through. Mix in the guajillo sauce and let it simmer for a few minutes.

Assemble the Chilaquiles
On a large serving platter, layer the crispy fries, then top with guajillo pulled pork, cheese curds, sliced avocado, and a drizzle of crema.

Finish with fresh cilantro and squeeze lime juice over the top before serving.
