Method

Preparing the Salmon

1

Marinate the Salmon

In a bowl, mix together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, 1 teaspoon of salt, and 1 teaspoon of black pepper. Add the salmon fillets to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes.

2

Preheat the Grill

Preheat your grill to medium-high heat (around 400°F or 200°C) while the salmon marinates.

3

Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Cook for about 6-8 minutes per side or until the salmon is cooked through and flakes easily with a fork. During the last minute of grilling, sprinkle with fresh dill.

Preparing the Vegetables

4

Prepping the Vegetables

While the salmon is marinating, wash and chop the asparagus, bell pepper, and zucchini into bite-sized pieces.

5

Grill the Vegetables

In a bowl, toss the chopped vegetables with 1 tablespoon of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper. Grill the vegetables alongside the salmon for about 5-7 minutes, or until they are tender and have grill marks.

Serving

6

Plate the Dish

Once cooked, plate the grilled salmon alongside the grilled vegetables. Serve immediately with additional lemon wedges if desired.
