Prepare Sushi Rice

Rinse the Rice

In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch and helps achieve a better texture.

Cook the Rice

In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow the rice to cool to room temperature.

Prepare Roll Ingredients

Slice the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice the avocado into thin strips.

Slice the Cucumber

Cut the cucumber in half lengthwise and remove the seeds with a spoon. Slice the cucumber into thin strips.

Prepare the Crab Meat

If using imitation crab, pull apart the crab meat into shreds. If using real crab, ensure it is cooked and flaked.

Assemble the California Roll

Prepare the Rolling Station

Lay a bamboo sushi mat on a clean surface and place a sheet of plastic wrap over it. This will help with rolling.

Add Nori and Rice

Place a sheet of nori on the plastic wrap with the shiny side down. Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Add Fillings

Layer the crab meat, avocado slices, and cucumber strips horizontally across the rice, about 1 inch from the bottom edge of the nori.

Roll the Sushi

Using the bamboo mat, start rolling the sushi away from you, applying gentle pressure to keep the roll tight. Roll until you reach the exposed edge of the nori. Wet the edge with a little water to seal the roll.

Slice the Roll

Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.

Serve

Arrange the sushi rolls on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
