1. Prepare the Ingredients
Ensure all ingredients are prepped: dice the carrots, chop the green onions, and if using, dice the cooked chicken or peel and devein the shrimp.
2. Scramble the Eggs

Pour the soy sauce and sesame oil over the rice mixture. Stir well to combine all ingredients, ensuring the rice is evenly coated with the sauce.
6. Add Eggs and Optional Ingredients
Return the scrambled eggs to the skillet. If you are using cooked chicken or shrimp, add them now. Stir everything together and cook for an additional 2-3 minutes until the optional ingredients are heated through.
7. Finish with Green Onions
Finally, add the chopped green onions and give everything one last stir. Cook for an additional minute.
