Prepare seafood

If shrimp are frozen, thaw under cold running water and pat dry. Check crabmeat for shells and pick through gently. Cut large shrimp in half crosswise so bite-sized pieces are uniform.

In a medium bowl combine ketchup, horseradish, Worcestershire sauce, hot sauce, and lemon juice. Whisk until smooth.

Fold the shrimp and crabmeat into the sauce gently, taking care not to break up the crab. Season with kosher salt and black pepper. Taste and adjust heat or acidity (add up to 1 tsp more lemon juice or 1/2 tsp more horseradish if desired). Cover and refrigerate for at least 15 minutes and up to 1 hour to let flavors meld.

Avocado & Salad Base

While the seafood chills, prepare the avocado and salad. Halve the avocados, remove pits, and scoop out a little flesh from the center of each half to create a slightly larger cavity for the seafood. Brush the avocado flesh with a little lemon juice to slow browning.

In a small bowl toss the mixed greens with the cherry tomatoes, sliced red onion, chopped cilantro (or parsley), and the teaspoon of extra virgin olive oil. Season lightly with a pinch of salt and a grind of black pepper. This will create a bed for the avocado halves.

Assembly & Garnish

Place a small handful of the dressed greens in the center of each serving plate to form a nest (serves 2: use half the greens per plate).

Set two avocado halves (per plate: one whole avocado yields two halves; this recipe serves 2) on top of the greens, cavity side up.

Spoon the chilled shrimp and crab cocktail into the avocado cavities, dividing evenly among the four halves (about 3 shrimp + 1.5 oz crab per half).

Drizzle a little additional lemon juice and the remaining few drops of olive oil over each filled avocado. Sprinkle paprika lightly over the seafood for color and a hint of flavor. Garnish with microgreens or chopped chives if using and serve with lemon wedges on the side.

Serve immediately so avocados retain texture. Leftover seafood mixture can be refrigerated up to 24 hours; assembled avocados are best eaten right away.
