Prepare the Vegetables
Chop the zucchini, red bell pepper, and eggplant into bite-sized cubes. Halve the cherry tomatoes.

Sauté the Vegetables
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the garlic (minced) and sauté for 1 minute until fragrant. Add the chopped zucchini, red bell pepper, and eggplant, and cook for about 5-7 minutes until they start to soften. Season with salt and black pepper.

Roast the Cherry Tomatoes
In a separate baking dish, toss the halved cherry tomatoes with 1 tablespoon of olive oil, balsamic vinegar, and a pinch of salt. Roast in a preheated oven at 400°F (200°C) for 15 minutes.

Finish and Serve
Once the sautéed vegetables are tender, remove from heat and stir in chopped fresh basil. Plate the four seasonal dishes: the sautéed vegetables, roasted cherry tomatoes, and any additional seasonal components you like such as grains or a sauce. Serve warm.
