Preparation Instructions
Cook the Farro
In a medium saucepan, bring 2 cups of water to a boil. Add the Anson Mills farro verde and a pinch of salt. Reduce the heat to low, cover, and simmer for about 30 minutes, or until tender. Drain any excess water and let cool.
Prepare the Salad Base
In a large salad bowl, combine the Esoterra salad greens, crunchy seed mix, sliced almonds, diced cucumber, and halved baby heirloom tomatoes.
Add the Farro
Once the farro is cool, add it to the salad bowl with the other ingredients.
Make the Vinaigrette
In a small bowl, whisk together 3 tablespoons of Dijon mustard, 2 tablespoons of tarragon vinegar, 1/2 cup of olive oil, salt, and pepper to taste.
Dress the Salad
Drizzle the house-made Dijon-tarragon vinaigrette over the salad and toss gently to combine. Adjust seasoning if necessary.
