Heat 15 liters of water to 68°C (154°F) and add the pale malt and caramel malt. Let it mash for 60 minutes.

Mash

After the mash, sparge with hot water to collect around 20 liters of wort.

Sparge

Bring the wort to a boil and add 50 grams of Citra hops at the beginning of the boil. Boil for 60 minutes.

Boil

Add 50 grams of Simcoe hops with 15 minutes left in the boil, and the remaining 50 grams of Citra hops with 5 minutes left.

Hops Addition

Cool the wort down to around 20°C (68°F) as quickly as possible.

Cooling

Transfer the wort to a fermenter and pitch the yeast. Seal and let it ferment at 18-20°C (64-68°F) for 1-2 weeks.

Fermentation

After fermentation is complete, dissolve 100 grams of priming sugar in a small amount of water and add it to the beer before bottling.

Bottling

Bottle the beer and let it condition for another 1-2 weeks before chilling and serving.
