Prepare the Bolognese Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Increase the heat to medium-high and add the ground beef and pork. Cook until browned, breaking it up with a spoon, about 8-10 minutes.

Pour in the red wine and let it simmer until mostly evaporated, about 5 minutes.

Add the canned crushed tomatoes, dried oregano, salt, and black pepper. Stir well, then reduce the heat to low and let it simmer for 30-40 minutes, stirring occasionally.

Taste and adjust seasoning if necessary. Stir in the fresh basil just before serving.

Cook the Tagliatelle
While the sauce is simmering, cook the tagliatelle according to package instructions until al dente. Drain and reserve some pasta water.

Toss the cooked tagliatelle with the Bolognese sauce, adding reserved pasta water as needed to loosen the sauce.

Serve the tagliatelle topped with grated Parmigiano Reggiano and additional fresh basil if desired.
